5:30 – George Mihaly of Paradigm Hill Wines shares some insights into the role of tannins in structure and the need for good structure when pairing wine and food. Paradigm Hill is a family run vineyard and winery located in the Mornington Peninsula, Victoria.     George Mihaly was a really good speaker. He concisely gave wonderful talk on the elements of structure and quality. His explanations were technical but understandable, and he didn’t stumble once. You hit the jackpot with George!

    Hi Hugo,

    Sadly not much access to Tassie wines in Belfast, we used to be able to get Ninth Island but I haven’t seen it in an a few years. But we travelled to Tassie when we lived in Melbourne and I remember the Pinot Noir and Reislings were sensational. Can’t remember much about the wineries, but Bay of Fires and Pipers Brook ring a bell.
